Hot Potato Soup
This is one of my favorite recipes that my Momma made when I was growing up, and now I make it for my family. As a matter of fact, since it's really really cold today - this is what we'll be having for dinner tonight!
Potatoes can be used about a gazillion different ways, and they're dirt cheap so I love having them on hand. This is a very basic recipe - but you can also add in whatever you have on hand to change it up (ham, corn, cream cheese, broccoli, sour cream...).
What You'll Need:
4 cups peeled & diced potatoes
5lb bag Russet Potatoes - $2.49
(Cost: around 65¢-75¢)
1/2 onion, sliced thinly
3lb bag Yellow Onions - $2.49
(Cost: around 10¢)
4 cups chicken broth
Progresso Chicken Broth - $2

MAKES IT $1
1 can evaporated milk
PET Evaporated Milk - 98¢
6 strips of bacon
Hormel Bacon - $2.50
(Cost: about $1.25)
1/2 cup shredded cheddar cheese
Crystal Farms Cheese - $2

MAKES IT $1.50

From The Pantry or Fridge:
1/2 stick butter
salt & pepper to taste
Fry bacon until crispy, and drain on paper towels. In a large stockpot add potatoes, onions, and butter to chicken broth. Bring to a boil and then cook on medium until the potatoes are tender. Reduce the heat to very low, and stir in the evaporated milk. Once the soup is heated through, it's ready - top with crispy bacon and shredded cheddar cheese.
