Bi-Lo Bargain Meal of the Week - Taco Night!


There's no doubt that this is the week to stock up on taco supplies at Bi-Lo.  Now I'm gonna share a little secret with you guys about how we do taco night at our house.

Slow Cooker Chicken Soft Tacos

Yep.  Taco night is ridiculously easy - but letting your slow cooker do all the work for you is going to make it even easier!

What You'll Need:
1 lb Chicken (boneless, skinless - split chicken breasts, really any kind)
SH Boneless Skinless Chicken Breasts BOGO @ $4.59/lb
MAKES IT $2.29/lb


1 can RoTel
RoTel - $1
USE B3G1 FREE from January All You Magazine
AND
USE (3) 25¢ OFF from SS 1/23
MAKES IT 38¢ each


Tortillas
Chi-Chi's Soft Taco Tortillas - 84¢
USE 50¢ OFF from SS 12/12 (exp 2/6) or SS 1/16
MAKES IT FREE PLUS OVERAGE


Salsa
Chi-Chi's Salsa - $1.34
USE $1 OFF from SS 1/16
MAKES IT 34¢


Shredded Cheese
Kraft Natural Shredded - $2
USE 55¢ OFF from Kraft Food & Family booklet
MAKES IT 90¢


Lettuce
Fresh Express Shreds - $2


Spray your slow cooker with non-stick spray and add chicken.  Pour in one can of RoTel and half a can of water per pound of chicken.  Set slow cooker to cook on low for 4-6 hours.  Half an hour before dinner, pull chicken out and shred.  Then just return the chicken to the slow cooker until you're ready to serve.  




Serve on the tortillas with taco toppings.  Dinner is done!  


TOTAL MEAL COST:  $5.75
(We usually have enough leftovers for one or two taco salads the next day, too!)



You can even go straight from the freezer to the slow cooker for this one, just cook on high for about an hour, then turn to low for remaining cook time.  


Your chicken will be super tender and the flavor is delicious!  I have started making this in large quantities and freezing the chicken for quick meals (taco salads, enchiladas, and jambalaya).  Don't like the flavor of RoTel?  Use a packet of taco seasoning and mix it with 1-1 1/2 cups of water instead!
