Bi-Lo Bargain Meal of the Week - Italian Meatball & Biscuit Bake

Italian Meatball & Biscuit Bake

I stumbled across this great recipe over at Pillsbury.
It's just so easy and quick -  I knew I'd want to share it with y'all!

Are your kids like mine and will eat just about anything with pasta sauce?  Spaghetti, pizza, lasagna?  They love it all, and I like knowing that I'm getting some veggies in there too!  This is one of those great recipes that includes pasta sauce but also uses pre-cooked frozen meatballs that will save me a ton of time in the kitchen.

What You'll Need:
18 oz package frozen Italian Meatballs
Mama Lucia Meatballs BOGO @ $6.99 ($3.49 each)

1 can Pillsbury Grands Buttermilk Biscuits
Pillsbury Grands - $1
USE $1 OFF printable
MAKES IT 50¢

14oz Tomato Pasta Sauce
Del Monte Spaghetti Sauce - $1

1 1/2 cups shredded mozzarella cheese
Sargento Natural Shredded Cheese - $2
USE $1/2 from SS 1/30
MAKES IT $1.50

Heat the oven to 375° and spray a 13x9 inch glass baking dish with nonstick cooking spray.  Place meatballs in a large microwave-safe bowl.  Microwave on MEDIUM power for 3 to 5 minutes or until meatballs are thawed.  Separate the dough into 8 biscuits.  Then cut each biscuit into 8 pieces.  Place in large bowl with meatballs and add pasta sauce.  Toss to coat all of the pieces.  Spoon and spread mixture into baking dish.  Bake 375°F for  30 to 40 minutes or until edges are a deep golden brown and biscuit pieces are no longer doughy.  Sprinkle with cheese and bake and additional 2 to 5 minutes or until cheese is melted.  Let stand 10 minutes before serving.

You'll have leftover pasta sauce, cheese, and meatballs.  Use sub rolls and make some yummy meatball subs for lunch the next day!

TOTAL MEAL COST:  $6.49
(Plus leftovers!)
