Bi-Lo Bargain Meal of the Week - Oven Fried Chicken Fingers




OVEN FRIED CHICKEN FINGERS

If your kids are anything like mine, they love chicken.  Here's an easy way to get crispy, crunchy chicken fingers at home without frying.  This one is perfect for lunch or dinner, and you can pair it up with just about any side.  My husband loves the leftovers too - they make great sandwiches!


What You'll Need:
1 lb Boneless Skinless Chicken Breasts - cut into bite sized pieces
Southern Home Chicken Breasts - $2.24/lb


Seasoned Croutons
Texas Toast Croutons - $1.25

From The Fridge:
Butter 





Dump the entire bag of croutons into a gallon-sized zippie bag.  Then, using a rolling pin or a can from the pantry - crush the croutons until they are like bread crumbs.  We like to use the cheese and garlic flavored croutons, so be sure to check out the different flavors to decide which your family likes best.*  Dip the chicken into butter, and then drop into the zippie bag with the crushed croutons.  Shake the bag to completely coat all the pieces.  Bake in a pre-heated 450° oven for 10-15 minutes on the top rack.  

*If we are using plain croutons, I dip the chicken in ranch or honey mustard dressing before coating.
