Bi-Lo Bargain Meal of the Week - Italian Baked Pork Chops


Italian Baked Pork Chops with Roasted Broccoli & Pasta

What You'll Need:
4-6 pork chops
Pork Chops $1.39/lb


1 cup Bread Crumbs 
Southern Home Bread Crumbs - 72¢
(cost about 36¢)


1/2 cup Parmesan Cheese
4C Homestyle Parmesan Cheese - $1.99

From the Pantry or Fridge:


1 egg
2 tbsp milk 
1-2 tbsp Italian seasoning (or use Italian bread crumbs)
about 1/2 cup flour (for coating chops)
salt & pepper to taste
2-4 tbsp olive oil 


Preheat oven to 325°.Heat oil to medium heat.  Mix the bread crumbs with the Italian seasoning and Parmesan cheese.  In a shallow dish, mix the egg and milk and beat lightly.  Salt and pepper your chops to your liking and coat in flour.  Then dip in egg/milk mixture and immediately coat with bread crumb mixture.  Brown the pork chops for about 4 minutes on each side in hot oil.  I do this in a cast iron skillet that I can move straight to the over.  If your pan is not oven-proof, transfer the pork chops to a baking dish.  Finish them in the oven at 325° for 20-25 minutes.  Drain on paper towels before serving.  

I would probably serve this with pasta and something green, and lately we've been on a major broccoli kick.  Since I started roasting broccoli with garlic, olive oil, salt and pepper my family has been eating it up like crazy - and it's just about the easiest side ever (you can even use frozen broccoli)!  

Seriously trying to get my eleven year old to eat more veggies....

ROASTED BROCCOLI

Crank the oven up to 425°-450°.  Cut broccoli into bite-sized pieces and place on baking sheet.  I like to line the baking sheet with aluminum foil to make for easy clean up.  Drizzle with olive oil and minced garlic (we like LOTS of garlic).  Season with fresh cracked pepper and sea salt.  Toss a little and put in the oven for around 8-10 minutes.  It's done when the edges of the broccoli just start to get brown.  

Add some more of the Parmesan and a little extra olive oil, and serve over 
hot cooked spaghetti noodles.  YUM!
