Bi-Lo Bargain Meal of the Week - Steak Night In


Marinated London Broil

If there's one thing my husband loves, it's a good steak - but you can quickly blow your budget going out for a steak dinner.  This is our favorite way to have a steak dinner on the cheap! 

What You'll Need:
2 lb London Broil
London Broil Beef Roast - $1.99/lb


From The Fridge or Pantry:
1-2 cloves of garlic, minced  
1 1/2 tablespoons of soy sauce
2-3 teaspoons ketchup
1 tablespoon vegetable/olive oil
1/4 teaspoon dried oregano
1/2 teaspoon black pepper


Pierce the meat well with a fork on both sides and place inside a gallon zip bag.  Mix all other ingredients in a bowl and pour onto of roast.  After you seal the bag, be sure to "rub" the marinade into the roast.  This marinade works best if you let it sit for at least 8 hours, or even better up to 24 hours (See marinade tip below).  If you're using the grill, use high heat and only leave it on for around 4-6 minutes on each side.  It's still going to look a little rare, but remember it will continue to cook even after you remove it from heat.  Let it sit for around ten minutes and then slice thin.  You can use your broiler, but I've found in the broiler it needs a few minutes more per side.  

Marinade Tip:  If you are buying more than one, double the marinade.  Then freeze the extra London Broil in the marinade. It will be ready to roll for next time!  This is what I'll be doing, since $1.99/lb is a stock up price for me.  


*Leftovers?  Throw the strips on top of a salad to make a quick meal.  They're great for fajitas too!*

EASY SIDE

Roasted Red Potatoes
99¢/lb 

Clean them well, and slice in half.  Coat them in olive oil, salt, and pepper.  Bake them for 45 minutes at 425°.  These are SO good with dried rosemary too - even better if you've got fresh!


TOTAL MEAL COST: $4.97 - $5.96!!  
Plus leftovers!
