Bi-Lo Bargain Meal of the Week - Slow Cooker Chicken


Basic Slow Cooker Chicken

Another great slow cooker recipe that makes dinner so easy!  Now that baseball season has arrived, I'm doing some dinnertime prep on the weekends that help make week nights a little easier.  Make this chicken and you already have part of your meal done.  You can make wraps and chicken salad sandwiches for lunches or have chicken that's already done for casseroles.  Just put them together in the morning (or the night before) and throw in the oven the next day!  

What You'll Need:
2 1/2 - 3lb Chicken
Whole Fryer - 99¢/lb


From The Pantry or Fridge:
4 tsp salt
1-2 tsp pepper
1 tsp onion powder
1 tsp garlic powder
1 tsp paprika
1 tsp cayenne pepper


Optional:
I usually add these if I have some hanging out in the crisper drawer....
1 onion roughly chopped
1-2 carrots roughly chopped
1-2 celery stalks roughly chopped


Remove any of that icky stuff (giblets) and clean your chicken.  Mix all of the spices and rub onto the chicken.  Place in slow cooker and cook on low until chicken is done (juices run clear - it will be falling off the bone).  This takes right at four hours in my slow cooker - but be sure to check yours since they all cook at different temps!  

You'll have a ton of broth when this is done.  Pour it into a dish and refrigerate once it's cool.  Then remove all of the fat that comes to the top of the liquid and you have very low-fat chicken broth.  Freeze it for other recipes. The broth makes a really, really good chicken noodle soup!
