Tuna- Stuffed Tomatoes
Sorry this one is a little late, but I was actually fixin' it for dinner tonight and wanted to snag some photos to add to the post. These are delicious, especially during the summer when my family doesn't want something super heavy. I am so anxious for our tomatoes in our garden to get ripe - these will be so much better with fresh tomatoes straight from the yard!
What you'll need:
2 cans chunk light tuna
Chicken of the Sea - 49¢

MAKES IT FREE
4 tomatoes
Beefsteak Tomatoes - $1.99/lb
1 cup shredded Mozzarella Cheese
Sargento Shredded Cheese - $2
(Using about half the package, makes it around $1)
From Your Pantry or Fridge:
Breadcrumbs (1 1/2 tbsp)
Mayo (1/4 cup)
Mustard (1 tbsp)
Pickle Relish (1/2 tbsp)
Salt & Pepper to taste
TOTAL COST: LESS THAN $5!
Drain the tuna well and combine it with mayonnaise, mustard, relish, and breadcrumbs

Slice the tops off of the tomatoes about 1/2 an inch from the top.
Scoop the centers out of the tomatoes...
Fill the tomatoes with the tuna mixture and top with mozzarella cheese. Throw them in the oven at 350° for about 15 minutes or until the cheese is good and melty and looks like this...
Serve this with some crusty bread and a quick side salad, or on top of fettuccine noodles - Too easy!
